Your wedding cake
should be a fusion of personal style and good tasteliterally! A truly memorable
wedding cake will be a focal point of your reception and will feature prominently in many
of your pictures.
Gallery House can design a wedding cake for you that will taste as good as it looks! You
do not have to choose from a group of standard cakes. I prefer to create a
unique cake for each bride, incorporating your wedding theme, colors or perhaps a motif
from your dress, invitation or bouquet, and of course, within your budget. Good design
doesnt cost extra at Gallery House!
Plan to order your cake three to six months in advance of your wedding. For June and
October weddings, plan on ordering at least six months in advance. We only
do one or two cakes per weekend, so that your cake gets our maximum attention.
All of our cakes are baked from scratch. Often cakes made in large commercial bakeries are
baked from mixes and frozen for weeks prior to decorating.
Cakes can be decorated with buttercream, marzipan, rolled fondant or meringue. Buttercream
is soft, smooth and creamy. It can be snowy white or tinted to match the colors in your
wedding.
Buttercream is a soft icing, and the
one you probably know best. Everyone likes buttercream (OK I've met two people over the
years who didn't like buttercream.) and it can be piped into almost endless designs and
flowers. It can be tinted to almost any color to match your color scheme. Just like our
cakes, our buttercream is homemade, and many people say it tastes "lighter" than
typical bakery icings. We make a special buttercream icing that will hold up in high
temperatures and high humidity, so it is perfect for garden (outside) weddings.
Marzipan is made from almond paste. It is not white. Marzipan is a beige color and can be
tinted somewhat. It has a distinct and pronounced almond flavor. If it fits in with your
color scheme and you like the flavor of almond, a marzipan covered cake can be very
sophisticated.
Fondant gives the cake a porcelain-like
finish. Some people object to the taste of fondant, but personally I think it tastes
great! Fondant tastes a bit like marshmallow, but it is not as soft. Fondant holds up
better in summer heat than buttercream.
Some designs can be achieved best in buttercream. Other designs can be achieved best in
fondant. A nice look for wedding cakes is to start with a buttercream covered cake and add fondant
embellishments. This way you can get the soft creamy taste of buttercream,
but achieve design details that can only be crafted in fondant. The best of both worlds!
Meringue can be formed in to flowers, just like buttercream. It is made from either
meringue powder or egg whites plus sugar. We generally use meringue powder since it is
much safer to eat. Meringue does not hold up well in summer heat, especially in the heat
and humidity experienced during Louisville summers. Meringue cakes have been known to
wilt!
Before you book your wedding cake with us, we'll let you taste* cake and different
coverings. You wouldn't buy a wedding dress without trying it on and we think you should
sample the cake before you buy it too! Occasionally we host wedding cake tastings which
several different couples will attend. Or you may have a private meeting and tasting.
To get started, begin looking at wedding books and magazines to determine which styles of
cakes you don't like. That will narrow the design scope. Then concentrate on designs you
do like. We'll help you from this point, and design a cake that fits your style and
budget! If possible, bring a picture of your dress and a swatch of the material for color
matching.
One of the main reason brides choose Gallery House to create their wedding cake is because
we don't require you to pick from standard cake designs. Even if you do start with a
picture of a cake from a magazine or cake design book, we can modify it to make it your
own. You shouldn't see your cake at another wedding, because we make every effort to
design a unique cake that fits your desires, style and budget. If for some reason you do
not choose us to bake your wedding cake, we appreciate your not taking our designs to
another baker/chef.
